2 ½ cups cubed chicken breast, cooked*
12 ounces dry rotini**
6-8 tablespoons butter
1 medium onion, chopped
2 stalks celery, chopped
1 jalapeno pepper, chopped
24 ounces Sing & Shout Queso
1 (14 ounce) can creamy chicken mushroom soup
8 ounces sour cream
Cook pasta according to package instructions.
Melt butter in medium saucepan. Sauté onion, celery, and jalapeno 5-7 minutes until soft. Add Sing & Shout Queso and creamy chicken mushroom soup, stirring to combine. Remove from heat and stir in sour cream.
Place cooked pasta in 9×13 casserole dish and top with chicken. Pour queso mixture over pasta and chicken. Do not stir. Cover and bake 350 degrees for 25-30 minutes, until bubbly.
* rotisserie chicken may be used
