2 Roma tomatoes
16 oz Canola oil
10 six inch corn tortillas cut into 1″ strips
4 tablespoons bacon drippings
3.5 oz onion
2.5 oz serranos, seeded and chopped
4 oz pepper jack cheese
4 oz sharp cheddar cheese

Sing & Shout Salsa
Beat eggs in a medium bowl, adding two generous pinches of salt. Chop tomatoes and place in a strainer, tossing with a generous pinch of salt. Let liquid drain.
Fry tortilla strips in canola oil until golden, about 4-5 min.
Add bacon drippings to 12″ skillet and heat to medium-high. Add onion and serranos and saute until soft, about 5 minutes. Reduce heat to medium. Pour in the eggs. Salt and pepper to taste. Let eggs start to cook. As eggs begin to set, lift the eggs with the flat spatula, letting the uncooked egg run under. While eggs are still partially set, add cheese and gold in until almost melted. Fold in tortilla strips. Fold in tomatoes. Top with Sing & Shout Salsa.
